William Brennan has spent four decades inside the hospitality industry — from line cook to executive chef, from floor manager to multi-unit operator. The last thirty of those years have been devoted to strategic consulting, guiding independent restaurateurs, hotel groups, and emerging concepts through every chapter of the operational lifecycle.

His approach is built on direct, in-restaurant intervention. William is the consultant who works the line on Saturday night, audits the prep list on Tuesday morning, and presents the turnaround plan in the boardroom on Wednesday. He has steered more than two hundred operations through turnarounds, expansions, and ground-up launches.

Edith knows exactly what happens when the doors open and the rush begins. Starting as a server and rising to become a General Manager of high-volume restaurants, Edith spent the first decade of her career mastering the front and back of the house.
She has translated that “in-the-trenches” experience into a successful consulting practice. Edith specializes in helping owners and chefs bridge the gap between their creative vision and the daily realities of running a profitable business. Having worked across diverse concepts—Edith brings years of battle-tested wisdom to every client, ensuring their team and their bottom line are ready for the next level.
